Now about the choice: of the three you name (Guardian, Revenant and Thief): Guardian is the easiest to level of the three and is paired with Revenant in terms of build diversity at the end game. The main drawbacks at the begining are a lower base HP and lack in mobility for the core class, but you can deal with it.
Druid is typically preferred as it provides good unique buffs along with healing. The only core class that has decent healing potential without its subclass mechanics is Elementalist but it's primarily run as DPS glass cannon. For support, Mesmer (Chronomancer) and Warrior are the most common.

Profession changers are NPCs who can change your character 's secondary profession. They will only offer to change your secondary profession once you have fulfilled a one-time requirement for each secondary you want to be able to switch to. Untamed is the spamm build. It refunds ability cooldowns when usinf CC on an enemy. It uses hammer as a melee weapon and then basically constantly rotates through its damage abilities then all its stun abilities to reset all its damage abilities. If you want a spamm away meta build this is it for open world.
Blood Magic is also fine. This game is not so stuck on set builds like other games. You can make most classes and skill combinations work. OP needs to just experiment and have fun. Don't discourage him from experimenting. That was one of the best things about Guild Wars 1.
